Built upon the culinary vision of Chef Nick Swanson, Urban Field Pizza launched its first brick and mortar restaurant at 2nd and Main Streets in Longmont, CO in May, 2022.  Just two years later, Paul and the UF team opened the doors to the second Urban Field Pizza a few miles north in Loveland.  The third UF Pizza is located in the tap room of Peculier Brewing Company in Windsor, CO and opened in July 2025, representing the company's first venture into counter service.

Prior to co-founding UF Pizza, Paul spent the prior two decades opening and operating the Mountain Sun Pubs and Breweries in Boulder, Denver and Longmont, CO.  During his time there, the company grew to employ more than 300 team members across its five locations and three breweries.

In 2009, Paul was elected to the Board of Directors of EatDenver, a non-profit created to support local and independent dining in Denver.  He served as President of the organization from 2014 – 2016 and Program Director from 2017-2020.  Paul also served on the board of the Boulder Chamber Community Affairs Council from 2019 – 2020.

Paul has spoken on hospitality and the restaurant industry at the Brewer’s Association’s Craft Brewer’s Conference, EatDenver, the Da Vinci Institute, and Boulder StartUp.
