The idea behind the catering menu was simple. Find the best ingredients and create fresh, exciting, unique dishes from scratch, sourced locally whenever possible.
Whether your event is your wedding, a birthday celebration or a corporate function, chef Nick Swanson is passionate about designing and executing a menu that is truly yours. While we're happy to prepare anything from our extensive menu, what we truly enjoy is digging deep into your culinary past to find the dishes you crave and have never forgotten.
"What I love about cooking is that food is a very personal experience," said Culinary Director Nick Swanson. "When a couple wants salmon on their wedding menu, my favorite part of the job is figuring out what that fish tastes link in their heads. That's the fun of it all."
In 2005, working in his first kitchen, Nick's culinary talent was quickly recognized. Rapidly rising from prep cook to sous chef at Boulder's Bacaro Venitian Taverna sparked what would become a life-long culinary drive in Nick. The Bacaro chefs saw his raw talent and sponsored Nick to stage in Italy at the MIchelin-starred Relais Villa d'Amelia under Chef Damiano Nigro.
Upon completing this stage, Nick wasted no time finding his next culinary challenge. In 2008 in New York City he graduated with honors from the esteemed French Culinary Institute before furthering his studies working side-by-side with Chef Fabio Trabocchi at his famed Fiamma and next with Chef Jean-Georges at his West Village gem Vongerichten's Perry Street Restaurant.
Nick's reputation in New York soared and soon he was spending his days off as a chef for the stars, designing and executing menus for celebrities such as Nicole Kidman, Hugh Jackman and Calvin Klein.
Family would eventually draw Nick back to Boulder, CO where he was hired to open Pasta Vino. Shortly after opening night in 2013, however, the Mountain Sun Pubs and Breweries successfully recruited Nick to learn the business side of commercial kitchens in preparation for him taking over the reigns of Under the Sun Eatery in 2015.

What if I'd like a dish not listed on your menu?
Not a problem. Our chefs make it their number one priority to create and execute whatever you wish whether it’s on our menu or not. If you have ideas, please let us know. We’re always happy to step outside of our menu.
Will you provide servers & bartenders for my event?
Absolutely. Our training programs are extensive and thorough. Throughout their careers with us, our servers and bartenders attend hospitality seminars. We take hospitality seriously and believe we have the best service staff in the business.
WHAT STYLE OF SERVICE DO YOU OFFER?
We specialize in multiple forms of service. For events of less than 50 people, we offer plated, buffet or family styles of service. For events of more than 50 people, we offer buffet or family styles of service. Starters can be served at a station, family style or passed by our wait staff.
DO YOU COORDINATE LINENS, GLASSWARE, PLATES, AND SILVERWARE?
We certainly can. We will plan and arrange for as much or as little of your event as you like. We’ve even booked bands for events.
In short, we’ll do whatever it takes to make your event absolutely perfect.
DO YOU PROVIDE FLOWERS AND CENTERPIECES FOR THE TABLES AT OUR EVENT?
We stay focused on the food and service so they’re perfect! We do, however, have a preferred florist we use for our restaurant. Mention Urban Field for a 10% discount.

DO I NEED TO PAY A DEPOSIT TO BOOK URBAN FIELD TO CATER MY EVENT?
We require 50% deposits upon booking Urban Field Catering. The remaining 50% is due at the completion of your event.
ARE WE SUPPOSED TO TIP OUR SERVERS?
Just like when you eat out at a restaurant, whether you leave a gratuity and how much you leave is completely up to you.
DO YOU HAVE A LOCATION FOR PRIVATE EVENTS LIKE REHEARSAL DINNERS?
We do. Urban Filed Pizza & Market in Longmont, CO is the perfect location for any private or semi-private event. We strive to work with any budget. Just ask your Event Captain for details.

It is essential to Executive Chef Nick Swanson to utilize local food whenever possible. While it is not always feasible to source everything we serve from Colorado, it is the first place we turn. Here’s a list of local purveyors we utilize:
