Nick Swanson

In July, 2024—just two years after launching his first brick and mortar restaurant at 2nd and Main in Longmont, CO—Nick helped open the doors to the second Urban Field Pizza a few miles north in Loveland. The opening came on the heels of a 2024 appearance on Chopped on the Food Network and a 2023 7th Place Finish at the International Pan Pizza Competition in Las Vegas, NV.
Prior to co-founding Urban Field Pizza, Nick joined the Mountain Sun Pubs and Breweries as Chef of the Pearl Street location in Boulder in 2013. Two years later, he was promoted to Executive Chef of Under the Sun Eatery and Pizzeria, the restaurant group’s entrée-driven, wood-fired oven concept. During his time there, Nick’s cuisine developed a reputation that would lead to a catering company, multiple awards in the local media and an appearance on Guy’s Grocery Games on the Food Network.
Nick graduated with honors from the French Culinary Institute. In addition to a stage in Italy at the Michelin-starred Relais Villa d’Amelia under Chef Damiano Nigro, Nick has worked in New York City with Chef Fabio Trabocchi at Fiamma and Chef Jean-Georges at Vongerichten’s Perry Street Restaurant. He’s cooked for Nicole Kidman, Hugh Jackman, and Calvin Klein.
