Built upon the culinary vision of Chef Nick Swanson, Urban Field Pizza launched its first brick and mortar restaurant at 2nd and Main Streets in Longmont, CO in May, 2022.  Just two years later, Lindsey and the UF team opened the doors to the second Urban Field Pizza a few miles north in Loveland.  The third UF Pizza is located in the tap room of Peculier Brewing Company in Windsor, CO and opened in July 2025, representing the company's first venture into counter service.

Prior to UF Pizza, Lindsey joined the Mountain Sun Pubs and Breweries in 2012 as a member of the opening management team of Under the Sun Eatery and Pizzeria.  Two years later, she helped open Longs Peak Pub and Taphouse, where she would serve as General Manager until the opening of Urban Field Pizza and Market. 

Before to the Mountain Sun, Lindsey spent six years managing banquets at the European luxury resort, Sonnenalp in Vail, CO.  In 2010, she was named Employee of the Year.  Shortly after, Lindsey earned her Sommelier certification.
