Built upon the culinary vision of Chef Nick Swanson, Urban Field Pizza launched its first brick and mortar restaurant at 2nd and Main Streets in Longmont, CO in May, 2022.  Just two years later, Darrin and the UF team opened the doors to the second Urban Field Pizza a few miles north in Loveland.  The third UF Pizza is located in the tap room of Peculier Brewing Company in Windsor, CO and opened in July 2025, representing the company's first venture into counter service.

Darrin realized his passion for designing cocktails in 2003 when he was taught to make a Pisco Sour behind the bar of El Alimbique, high in the Chilean Andes. The cocktail’s elegant simplicity sparked in him a passion for mixology that would soon become his life’s pursuit.

In 2004, Darrin moved to Aspen, CO to further develop his cocktail skills at bustling apre ski spots, including 39 Degrees in the Sky Hotel.  After three years in the Colorado Rockies, he moved to Boulder to join the bar team at Bacaro.  By 2011, he had partnered with the Bacaro owners to open PastaVino, where he developed and managed a cocktail program offering modern interpretations of classic cocktails.
